Ingredients
– 1 tablespoon olive oil
– 1 onion, chopped
– 2 garlic cloves, minced
– 1 carrot, diced
– 1 teaspoon ground cumin
– 1 teaspoon smoked paprika
– 400 g canned chopped tomatoes
– 1 cup red lentils
– 4 cups vegetable broth
– Salt and pepper to taste
Method
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and cook until soft, about 5 minutes.
3. Stir in minced garlic, diced carrot, cumin, and smoked paprika. Cook for another 2 minutes.
4. Pour in canned tomatoes, red lentils, and vegetable broth. Bring the mixture to a boil.
5. Reduce heat and let it simmer for 25 minutes. Season with salt and pepper before serving.
