Ingredients
– 1 cup of sugar
– 1/2 cup of water
– 1 tablespoon of lemon juice
– 3 cups of milk
– 1/3 cup of rice
– 1 teaspoon of vanilla extract
– 1 teaspoon of cinnamon
– 1/2 cup of raisins
– 4 egg yolks
– Zest of 1 lemon
Method
1. In a saucepan, mix sugar, water, and lemon juice. Heat over medium until the sugar dissolves, then bring it to a boil.
2. Add rice into the pan and reduce heat. Simmer for about 20 minutes, stirring occasionally until the rice is tender.
3. Combine milk, vanilla, and cinnamon in another pot. Heat until warm, then slowly whisk in the egg yolks.
4. Pour this mixture into the rice pot. Stir to combine and cook for another 10 minutes, making sure it thickens.
5. Finally, stir in the raisins and lemon zest. Once mixed, remove from heat and let it cool down before serving.
