Ingredients
– 225 g plain flour
– 100 g unsalted butter, softened
– 50 g brown sugar
– 1/4 tsp salt
– 250 ml corn syrup
– 150 g brown sugar
– 3 large eggs
– 1 tsp vanilla extract
– 200 g pecan nuts, chopped
– 1/4 tsp ground cinnamon
Method
1. Preheat the oven to 180°C and line a baking dish with baking paper.
2. In a bowl, mix flour, softened butter, brown sugar, and salt until crumbly. Press this mixture evenly into the bottom of the baking dish.
3. Bake the base for 15 minutes, then remove from the oven and set aside to cool slightly.
4. In another bowl, whisk corn syrup, brown sugar, eggs, and vanilla together. Stir in the chopped pecans and ground cinnamon.
5. Pour the pecan mixture over the baked base and return to the oven for another 25-30 minutes. Allow to cool before cutting into bars.
