Ingredients
– 500g bread flour
– 350ml warm water
– 1 teaspoon instant yeast
– 1 tablespoon salt
– 250g sourdough starter
– 150g dried cranberries
– Zest of 1 orange
– 1 tablespoon sugar
– 1 tablespoon baking soda
– 1 egg (optional, for egg wash)
Method
1. Combine the bread flour, salt, and sugar in a large bowl.
2. Stir in the warm water, instant yeast, and sourdough starter until it forms a dough.
3. Knead the dough on a floured surface for about 10 minutes. Add in the cranberries and orange zest while kneading.
4. Place the dough in a greased bowl and cover it with a cloth. Let it rise for 1-2 hours, or until it doubles in size.
5. Preheat the oven to 220°C. Boil water in a large pot and add the baking soda. Shape the bagels and boil them for 1-2 minutes before baking on a lined tray for 20-25 minutes, or until golden brown.
