Ingredients
– 200 g dried sotanghon noodles
– 1.5 litres water
– 2 tablespoons cooking oil
– 1 clove garlic, minced
– 1 medium onion, chopped
– 1 carrot, sliced thinly
– 1 bunch bok choy, chopped
– 2 eggs
– Salt, to taste
– Pepper, to taste
Method
1. Start by boiling water in a large pot. Once boiling, add the sotanghon noodles and cook for about 5 minutes or until tender. Drain and set aside.
2. In the same pot, heat the cooking oil over medium heat. Add garlic and onion, then sauté until they look soft.
3. Add the carrot and bok choy into the pot. Stir them well and cook for another 3 minutes.
4. Pour in the remaining water and let it boil. Once boiling, add the cooked noodles back into the soup.
5. In a small bowl, whisk the eggs, then slowly pour them into the soup while stirring. Season with salt and pepper as desired.
