Ingredients
– 4 kg whole turkey
– 4 cups water
– 1 cup salt
– 1/2 cup brown sugar
– 2 tablespoons paprika
– 2 tablespoons garlic powder
– 1 tablespoon onion powder
– 1 tablespoon black pepper
– 2 cups applewood chips
– 1/2 cup butter
Method
1. Start by combining water, salt, brown sugar, paprika, garlic powder, onion powder, and black pepper in a large pot. Stir until the salt and sugar dissolve fully to create a brine.
2. Place the turkey in a large container and pour the brine over it. Make sure the bird is fully submerged. Cover and refrigerate for at least 12 hours.
3. Prepare your smoker according to the manufacturer’s instructions. Soak the applewood chips in water for about 30 minutes, then drain.
4. Take the turkey out of the brine and rinse it under cold water. Pat it dry with paper towels, then rub the outside and inside with butter.
5. Place the turkey in the smoker, add the soaked wood chips, and smoke for about 4-5 hours or until the internal temperature reaches 75°C.
