Ingredients
- 500 g smoked sausage
- 2 medium potatoes, diced
- 2 carrots, sliced
- 1 red bell pepper, chopped
- 1 zucchini, sliced
- 1 large onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon thyme
- Salt and pepper to taste
Method
- Preheat the oven to 200°C.
- In a large baking dish, combine the diced potatoes, carrots, bell pepper, zucchini, and onion.
- Slice the smoked sausage and add it to the vegetables.
- Drizzle with olive oil and sprinkle garlic powder, thyme, salt, and pepper over the top. Toss everything together.
- Roast in the oven for 30-35 minutes or until the veggies are tender and slightly browned.
