Ingredients
– 2 cups of diced chicken breast
– 1 tablespoon of vegetable oil
– 1 onion, chopped
– 3 cloves of garlic, minced
– 1 tablespoon of fresh ginger, minced
– 1 can (400 ml) of coconut milk
– 2 tablespoons of red curry paste
– 2 cups of mixed vegetables (like bell peppers and broccoli)
– 2 tablespoons of soy sauce
– Fresh basil leaves for garnish
Method
1. Heat the vegetable oil in a slow cooker on the sauté setting. Add the chopped onion, and cook for 2-3 minutes until soft.
2. Stir in the minced garlic and ginger. Sauté for another minute until fragrant.
3. Add the diced chicken into the slow cooker, followed by the coconut milk and red curry paste. Mix well.
4. Toss in the mixed vegetables and soy sauce. Stir everything together until well combined.
5. Cover the slow cooker and cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender. Garnish with fresh basil before serving.
