Slow Cooker Pepperoncini Roast
Ingredients
1. 1.5 kg beef roast
2. 1 cup pepperoncini (jarred)
3. 1 onion, sliced
4. 4 cloves garlic, minced
5. 2 tbsp olive oil
6. 1 cup beef broth
7. 2 tsp dried Italian herbs
8. 1 tsp black pepper
9. 1 tsp salt
10. 1 tbsp Worcestershire sauce
Method
1. Heat olive oil in a frying pan over medium-high heat. Sear the beef roast on all sides until browned.
2. Place the sliced onion at the bottom of the slow cooker. Add the seared roast on top.
3. Pour the beef broth over the roast. Then, add the garlic, pepperoncini, dried herbs, salt, pepper, and Worcestershire sauce.
4. Cover the slow cooker with the lid. Cook on low for 8 hours or high for 4 hours.
5. Once finished, shred the meat with two forks and mix with the juices. Serve with your favorite sides.
