Ingredients
– 500 g chicken thighs, chopped
– 400 ml coconut milk
– 1 onion, diced
– 2 cloves garlic, minced
– 1 tablespoon curry powder
– 1 teaspoon ginger, grated
– 1 red bell pepper, sliced
– 2 cups spinach
– Salt and pepper to taste
– 1 tablespoon lime juice
Method
1. Place the chicken thighs into the slow cooker.
2. Add the diced onion, minced garlic, curry powder, ginger, and sliced bell pepper on top.
3. Pour in the coconut milk and mix everything together.
4. Season with salt and pepper. Cover and cook on low for 6-8 hours.
5. Stir in the spinach and lime juice just before serving.
