Method
1. Place the diced chicken into the slow cooker.
2. Add the chopped onion, minced garlic, and grated ginger.
3. Pour the coconut milk over the chicken and vegetables, then sprinkle in the curry powder.
4. Stir in the red bell pepper and green beans. Season with soy sauce, salt, and pepper.
5. Cover the slow cooker and cook on low for 6-7 hours or on high for 3-4 hours.
