Ingredients
– 500 g chicken breast, diced
– 1 large onion, chopped
– 2 cloves garlic, minced
– 400 g diced tomatoes, canned
– 500 ml chicken broth
– 1 can black beans, drained and rinsed
– 1 cup corn, frozen or canned
– 2 teaspoons chili powder
– 1 teaspoon cumin
– 4 corn tortillas, cut into strips
Method
1. Place the diced chicken in the slow cooker.
2. Add the chopped onion, minced garlic, and diced tomatoes.
3. Pour in the chicken broth and add the black beans, corn, chili powder, and cumin.
4. Stir everything to combine well, then cover the slow cooker.
5. Cook on low for 6 to 8 hours. Before serving, add tortilla strips and let sit for 10 minutes.
