Ingredients
– 500 g chicken breast, cut into pieces
– 250 ml chicken broth
– 2 tbsp peanut butter
– 4 tbsp soy sauce
– 1 tbsp honey
– 2 cloves garlic, minced
– 1 tsp ginger, grated
– 250 g rice noodles
– 1 carrot, julienned
– 2 green onions, chopped
Method
1. Place the chicken in the slow cooker.
2. Combine the chicken broth, peanut butter, soy sauce, honey, garlic, and ginger in a bowl. Pour this mixture over the chicken.
3. Cover and cook on low for 6 to 7 hours or high for 3 to 4 hours.
4. About 30 minutes before serving, cook the rice noodles according to the package instructions. Add the carrots to the slow cooker.
5. Serve the chicken mixture over the noodles. Top with green onions before enjoying.
