Ingredients
– 500 g chicken breast, diced
– 1 onion, chopped
– 2 garlic cloves, minced
– 2 cm ginger, grated
– 1 tablespoon curry powder
– 400 ml coconut milk
– 400 g diced tomatoes
– 1 red bell pepper, sliced
– 200 g spinach
– Salt and pepper to taste
Method
1. Start by placing the diced chicken into the slow cooker.
2. Add the chopped onion, minced garlic, and grated ginger on top of the chicken.
3. Sprinkle in the curry powder, then pour in the coconut milk and diced tomatoes. Stir everything well.
4. Toss the sliced bell pepper into the mixture. Season with salt and pepper according to your taste.
5. Cover the slow cooker and cook on low for 6 hours. Stir in the spinach 10 minutes before serving.
