Ingredients
– 450g large prawns, peeled and deveined
– 1/2 cup cornflour
– 2 eggs
– 1/2 cup low-fat milk
– 1/4 cup honey
– 1/4 cup light mayonnaise
– 1 tablespoon soy sauce
– 1/2 cup chopped walnuts
– 1 tablespoon vegetable oil
– Cooked rice, to serve
Method
1. Start by cooking the prawns. Dip each piece in cornflour, then in beaten eggs mixed with milk.
2. Heat vegetable oil in a pan over medium heat. Add coated prawns and cook until golden on both sides.
3. While prawns cook, combine honey, mayonnaise, and soy sauce in a bowl. Mix until smooth.
4. Once prawns are cooked, remove them from the pan and toss with the honey mixture and walnuts.
5. Serve the shrimp over cooked rice.
