Delicious Siru Keerai Poriyal Recipe: Healthy Greens Stir-Fry

Ingredients

– 400 g of siru keerai (amaranth leaves)
– 1 tablespoon of oil
– 1 teaspoon of mustard seeds
– 1 teaspoon of urad dal
– 1 onion, finely chopped
– 2 green chilies, slit
– 1 garlic clove, minced
– Salt to taste
– 1/4 teaspoon of turmeric powder
– 1 tablespoon of grated coconut (optional)

Method

1. Start by washing the siru keerai well in water. Drain it and chop the leaves finely.
2. Heat the oil in a pan over medium heat. Add mustard seeds and let them sputter.
3. Next, add urad dal, chopped onion, green chilies, and minced garlic. Sauté until the onion turns golden.
4. Mix in the chopped leaves with salt and turmeric powder. Cook for about 5 minutes, stirring occasionally.
5. Finally, if desired, sprinkle grated coconut on top before serving.
