Ingredients
- 1 cup pumpkin puree
- 1 cup all-purpose flour
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 1/4 cup almond milk
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon pumpkin spice
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
Method
- Preheat your oven to 180°C and line a muffin tray with paper liners.
- In a large bowl, mix together the pumpkin puree, oil, almond milk, and vanilla extract until smooth.
- Add the brown sugar, flour, baking powder, baking soda, pumpkin spice, and salt to the mixture and stir gently until combined.
- Spoon the batter evenly into the muffin tray, filling each liner about 3/4 full.
- Bake in the oven for about 20-25 minutes, or until a toothpick comes out clean.
