Ingredients
250 g crushed biscuits
125 g melted butter
1 cup cream cheese
½ cup sugar
1 cup whipped cream
1 cup fresh strawberries, chopped
1 teaspoon vanilla extract
1 tablespoon lemon juice
1 tablespoon gelatin
¼ cup boiling water
Method
1. Begin by crushing the biscuits into fine crumbs. Place them in a bowl and pour in the melted butter. Mix well until all the crumbs are coated.
2. Press the crumb mixture into the bottom of a square baking dish evenly. Set it in the fridge to chill while you prepare the filling.
3. In a mixing bowl, beat the cream cheese and sugar until smooth. Add the whipped cream, vanilla extract, and lemon juice. Stir until everything is combined nicely.
4. Dissolve the gelatin in boiling water and let it cool slightly. Pour the gelatin into the cream cheese mixture and blend thoroughly.
5. Fold in the chopped strawberries gently. Spread the mixture over the chilled biscuit base and refrigerate for at least 4 hours or until firm.
