Ingredients
2 cups potato, diced
1 cup onion, chopped
1 cup carrot, diced
4 cups vegetable or chicken broth
1 cup cream
1 cup cheese, shredded
1 tsp garlic powder
Salt to taste
Pepper to taste
Chives, chopped, for garnish
Method
1. Begin by heating a large pot over medium heat. Add the diced onion and carrots. Cook for about 5 minutes until the onions become soft.
2. Stir in the diced potatoes and pour in the broth. Bring the mixture to a boil, then reduce the heat to a simmer. Cover and let it cook for about 20 minutes or until the potatoes are tender.
3. Blend the soup with an immersion blender until it becomes smooth. If using a standard blender, let the soup cool slightly before blending in batches.
4. Once blended, return the soup to the pot. Stir in the cream, garlic powder, salt, and pepper. Allow it to warm through on low heat for about 5 minutes.
5. Serve in bowls and sprinkle with shredded cheese and chopped chives for a finishing touch.
