Ingredients
– 500 g raw shrimp, peeled and deveined
– 1 cup diced cucumber
– 1 cup halved cherry tomatoes
– 1 avocado, diced
– 4 tbsp mayonnaise
– 2 tbsp fresh lemon juice
– 1 tbsp olive oil
– 1 tsp dried dill
– Salt, to taste
– Pepper, to taste
Method
1. Start by cooking the shrimp. Boil water in a pot and add the shrimp. Cook until they turn pink, about 2-3 minutes. Drain and let them cool.
2. In a large bowl, mix together the cucumber, tomatoes, and avocado.
3. In a separate smaller bowl, combine mayonnaise, lemon juice, olive oil, dill, salt, and pepper. Stir until creamy and well combined.
4. Add the cooled shrimp to the vegetable mixture. Pour the dressing over the top and gently toss everything together.
5. Serve cold or at room temperature. Enjoy your delicious shrimp salad!
