Method
1. Heat the olive oil in a large pan over medium heat.
2. Add the chopped onion and garlic. Sauté until they are soft, about 3 minutes.
3. Stir in the canned tomatoes, dried oregano, and vegetable broth. Bring the mixture to a gentle simmer.
4. Add the orzo pasta and cook according to package instructions, stirring occasionally.
5. When the orzo is tender, mix in the shrimp and cook until they are pink. Season with salt and garnish with fresh parsley before serving.
