Ingredients
- 2 cups almond flour
- 1/2 cup sweetener
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1 can (400 ml) coconut cream, chilled
- 1 tablespoon sweetener (for the cream)
- 1 teaspoon vanilla extract (for the cream)
- Fresh berries, for serving
Method
- Preheat the oven to 180°C. Prepare a baking dish by lining it with baking paper.
- Mix almond flour, 1/2 cup sweetener, melted butter, eggs, vanilla extract, and baking powder in a bowl until well combined.
- Pour the batter into the prepared dish and bake for around 20-25 minutes, or until golden brown.
- While the cake cools, whip the chilled coconut cream with a mixer. Add 1 tablespoon sweetener and 1 teaspoon vanilla extract. Continue mixing until fluffy.
- Slice the cake and serve with coconut cream and fresh berries on top.
