Delicious Shortcake Recipe With Light Coconut Whipped Cream

Ingredients

  • 2 cups almond flour
  • 1/2 cup sweetener
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1 can (400 ml) coconut cream, chilled
  • 1 tablespoon sweetener (for the cream)
  • 1 teaspoon vanilla extract (for the cream)
  • Fresh berries, for serving

Method

  1. Preheat the oven to 180°C. Prepare a baking dish by lining it with baking paper.
  2. Mix almond flour, 1/2 cup sweetener, melted butter, eggs, vanilla extract, and baking powder in a bowl until well combined.
  3. Pour the batter into the prepared dish and bake for around 20-25 minutes, or until golden brown.
  4. While the cake cools, whip the chilled coconut cream with a mixer. Add 1 tablespoon sweetener and 1 teaspoon vanilla extract. Continue mixing until fluffy.
  5. Slice the cake and serve with coconut cream and fresh berries on top.
