Method
1. Preheat the oven to 200°C (400°F). Lightly grease a sheet pan with olive oil.
2. In a large bowl, whisk together the eggs, salt, pepper, and garlic powder until well mixed.
3. Add bell peppers, spinach, and tomatoes to the egg mixture. Stir everything together until combined.
4. Pour the mixture onto the prepared sheet pan, spreading it evenly. Top with shredded cheese.
5. Bake in the preheated oven for about 20 minutes or until the eggs are set. Cut into squares and serve hot.
