Ingredients
2 whole branzino fish, cleaned
4 cups cherry tomatoes, halved
1 lemon, sliced
4 garlic cloves, minced
60 ml olive oil
1 teaspoon dried oregano
Salt, to taste
Black pepper, to taste
Fresh parsley, for garnish
Method
1. Start by preheating the oven to 220°C.
2. Place the cleaned branzino on a large sheet pan.
3. Scatter the cherry tomatoes and garlic around the fish.
4. Drizzle olive oil over everything, then season with oregano, salt, and pepper.
5. Lay lemon slices on top of the fish, then bake for about 20-25 minutes.
