Ingredients

– 30 g dried seaweed (wakame)
– 1 cucumber
– 1 carrot
– 2 tablespoons soy sauce
– 1 tablespoon rice vinegar
– 1 tablespoon sesame oil
– 1 teaspoon sugar
– 1 tablespoon sesame seeds
– 2 green onions
– Salt to taste

Method

1. Soak the dried seaweed in warm water for about 10 minutes until it expands and softens.
2. While the seaweed rehydrates, slice the cucumber and carrot into thin strips.
3. Mix soy sauce, rice vinegar, sesame oil, and sugar in a large bowl.
4. Drain the seaweed and chop it into bite-sized pieces. Add the seaweed, cucumber, carrot, sesame seeds, and chopped green onions to the bowl.
5. Toss everything together and sprinkle with salt to taste. Serve chilled or at room temperature.
