Ingredients
– 500g fish fillets, diced
– 250g prawns, peeled
– 1 onion, chopped
– 2 cloves garlic, minced
– 3 medium potatoes, diced
– 500ml fish or vegetable stock
– 250ml milk
– 100g corn kernels
– 2 tablespoons butter
– Salt and pepper to taste
Method
1. Melt the butter in a large pot over medium heat.
2. Add the chopped onion and minced garlic. Cook until soft, about 2-3 minutes.
3. Stir in the diced potatoes and cook for another 5 minutes.
4. Pour in the stock and bring the mixture to a boil. Reduce heat and simmer until potatoes are tender, about 10 minutes.
5. Add the fish, prawns, corn, milk, salt, and pepper. Cook gently for another 5 minutes until seafood is cooked through.
