Ingredients

3/4 cup boiling water
1/2 teaspoon salt
1/4 cup vegetable oil
4 scallions, finely chopped
4 large eggs

Method
1. In a bowl, combine the flour and salt. Pour the boiling water into the mixture. Stir with chopsticks or a fork until the dough forms.
2. Knead the dough on a floured surface for about 5 minutes until it is smooth. Cover the dough with a damp cloth and let it rest for 30 minutes.
3. Divide the dough into 4 equal pieces. Roll each piece into a thin circle. Brush with oil and sprinkle chopped scallions on top.
