Method
1. Heat olive oil in a large pot over medium heat.
2. Add the sausage, breaking it up with a spoon; cook until browned.
3. Stir in onion, garlic, carrot, and celery; cook until vegetables are tender.
4. Mix in Italian herbs, diced tomatoes, and broth; bring the soup to a simmer.
5. Add tortellini; cook until tender, about 5 minutes.
