Ingredients

4 salmon fillets
2 cups spinach
1 cup cherry tomatoes
1 cup heavy cream
4 cloves garlic, minced
1 tablespoon olive oil
1 teaspoon Italian seasoning
Salt, to taste
Pepper, to taste

Method

1. Heat olive oil over medium heat in a large skillet.
2. Season salmon fillets with salt and pepper, then place them in the skillet. Cook for about 4-5 minutes on each side until golden brown. Remove salmon and set aside.
3. In the same skillet, add minced garlic and sauté for about 1 minute.
4. Pour in heavy cream and sprinkle in Italian seasoning. Stir and heat until the sauce thickens slightly.
5. Add spinach and cherry tomatoes to the skillet. Cook for another 2 minutes until the spinach wilts. Return the salmon to the pan, cover with sauce, and serve.
