Ingredients
4 salmon fillets
3 tablespoons of butter
2 cloves of garlic, minced
2 eggs
1 tablespoon of lemon juice
1 teaspoon of fresh parsley, chopped
Salt, to taste
Pepper, to taste
1 tablespoon of olive oil
Method
Heat a pan over medium heat and add olive oil.
Season salmon fillets with salt and pepper, then place them skin-side down in the pan.
Cook for about 5 minutes on each side until golden brown.
In a separate bowl, whisk eggs with lemon juice, garlic, and parsley.
Pour the egg mixture into the pan to create a sauce and cook until the eggs begin to set.
