Ingredients
– 1 cup basmati rice
– 2 cups water
– 1/4 cup unsalted cashews
– 1/4 cup raisins
– 1/4 cup dried rose petals
– 2 tablespoons rose water
– 1 tablespoon vegetable oil
– 1/2 teaspoon salt
– 1/2 teaspoon ground cardamom
– Fresh mint leaves for garnish
Method
1. Rinse the basmati rice under cold water until the water runs clear.
2. In a pot, heat the vegetable oil over medium heat. Add cashews and fry until golden, then remove them and set aside.
3. In the same pot, add water, salt, and rose petals. Bring to a boil, then add the rice.
4. Reduce heat to low and cover the pot. Cook for about 15 minutes or until rice is tender and water is absorbed.
5. Fluff rice with a fork, mix in cardamom, raisins, fried cashews, and rose water. Garnish with fresh mint leaves before serving.
