Ingredients
- 2 cups of pasta (spaghetti or fettuccine)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 can diced tomatoes (400g)
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 cup fresh spinach
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- Parmesan cheese, for serving
Method
1. Boil a large pot of water. Add a pinch of salt and then the pasta. Cook for about 8-10 minutes or until al dente.
2. While the pasta cooks, heat olive oil in a pan over medium heat. Add the minced garlic and sauté for 1 minute.
3. Stir in the canned diced tomatoes, basil, oregano, salt, and pepper. Let it simmer for about 5 minutes.
4. Mix in the fresh spinach and cook until it wilts, which should take about 2 more minutes.
5. Drain the pasta and combine with the sauce in the pan. Serve hot with Parmesan cheese on top.
