Ingredients
– 800 g yellow tomatoes
– 2 tablespoons olive oil
– 1 medium onion, chopped
– 4 cloves garlic, minced
– 1 teaspoon salt
– ¼ teaspoon black pepper
– 1 tablespoon balsamic vinegar
– 1 tablespoon fresh basil, chopped
– 1 tablespoon fresh parsley, chopped
– 1 teaspoon sugar
Method
1. Preheat the oven to 200°C.
2. Cut the yellow tomatoes in half and place them on a baking tray.
3. Drizzle olive oil over the tomatoes, then add the chopped onion and minced garlic.
4. Sprinkle salt, black pepper, and sugar on top. Roast for 30 minutes until soft.
5. Once done, blend the roasted mixture with balsamic vinegar, basil, and parsley until smooth.
