Roasted Vegetable Salad Recipe
Ingredients
– 1 large zucchini, diced
– 1 red bell pepper, diced
– 1 yellow bell pepper, diced
– 1 red onion, chopped
– 2 cups cherry tomatoes, halved
– 3 tablespoons olive oil
– 1 teaspoon garlic powder
– 1 teaspoon dried oregano
– 1 teaspoon salt
– 1 teaspoon black pepper
Method
1. Preheat the oven to 200°C (about 400°F).
2. Place all the diced vegetables into a large bowl.
3. Drizzle olive oil over the vegetables, then sprinkle in the garlic powder, oregano, salt, and black pepper.
4. Toss everything together until the veggies are well-coated with oil and seasonings.
5. Spread the mixture in a single layer on a baking tray and roast in the oven for 25-30 minutes until tender.
