Roasted Sweet Potatoes
Ingredients
1 kg sweet potatoes
2 tablespoons olive oil
1 teaspoon salt
1 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon paprika
1 teaspoon dried thyme
1 tablespoon fresh rosemary, chopped
1 tablespoon honey
1 tablespoon balsamic vinegar
Method
Preheat the oven to 220°C.
Peel the sweet potatoes and cut them into even cubes, about 2.5 cm.
In a large bowl, toss the sweet potato cubes with olive oil, salt, pepper, garlic powder, paprika, and thyme until well coated.
Spread the seasoned sweet potatoes on a baking tray lined with baking paper in a single layer.
Roast in the oven for 25 to 30 minutes, or until they are golden and tender, flipping halfway through. Drizzle honey and balsamic vinegar before serving.
