Ingredients
– 4 red bell peppers
– ½ cup pesto
– 200 g goat cheese
– ¼ cup olive oil
– 1 teaspoon salt
– 1 teaspoon pepper
– 1 tablespoon balsamic vinegar
– Fresh basil leaves for garnish (optional)
– Toasted bread or crackers (for serving)
Method
1. Preheat the oven to 220°C.
2. Cut the red peppers in half and remove the seeds and stems.
3. Place the peppers on a baking tray, cut side up, and drizzle with olive oil, salt, and pepper.
4. Roast in the oven for about 25 minutes or until the peppers are soft and slightly charred.
5. Once the peppers are done, spread some pesto inside each half and top with crumbled goat cheese. Serve with balsamic vinegar and basil leaves on toasted bread or crackers.
