Delicious Roasted Red Peppers With Pesto And Goat Cheese Recipe

Ingredients

– 4 red bell peppers
– 1 cup basil pesto
– 150 g goat cheese
– 1 tablespoon olive oil
– Salt to taste
– Pepper to taste
– Optional: Fresh basil leaves for garnish

Method

1. Preheat the oven to 200°C (about 400°F).
2. Cut each red bell pepper in half and remove the seeds.
3. Place the pepper halves on a baking tray, cut side up, and drizzle with olive oil.
4. Spread some basil pesto into each half, then add crumbled goat cheese on top.
5. Roast in the oven for about 25-30 minutes, until the peppers are soft and slightly charred.
