Ingredients
– 2 large onions
– 400 g asparagus
– 1 sheet puff pastry
– 1 cup grated cheese
– 2 eggs
– 1/2 cup cream
– Salt to taste
– Pepper to taste
– Olive oil for drizzling
– Fresh herbs for garnish
Method
1. Preheat the oven to 200°C (390°F).
2. Peel and slice the onions, then toss them in olive oil on a baking tray. Roast until they are soft and golden, about 25 minutes.
3. Trim the asparagus ends and add them to the tray, drizzling with more olive oil. Roast for an additional 10 minutes.
4. Roll out the puff pastry and place it in a tart pan. Spread roasted onions and asparagus over the pastry. Combine eggs, cream, salt, and pepper in a bowl, then pour the mixture over the vegetables.
5. Sprinkle grated cheese on top. Bake the tart for 30 minutes or until golden and set.
