Ingredients
– 1 whole chicken (about 1.5 kg)
– 800 g sweet potatoes
– 2 tablespoons olive oil
– 1 teaspoon paprika
– 1 teaspoon garlic powder
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 2 tablespoons fresh rosemary (or 1 tablespoon dried)
– 1 lemon
– 4 cups mixed salad greens
Method
1. Preheat the oven to 220°C.
2. Peel and chop the sweet potatoes into cubes. Place them in a baking tray.
3. Drizzle olive oil over the chicken, then season with paprika, garlic powder, salt, and pepper. Rub this mixture all over the chicken.
4. Add the sweet potatoes to the baking tray. Scatter the rosemary around and squeeze half the lemon over everything.
5. Roast everything in the oven for about 1 hour and 10 minutes or until the chicken is fully cooked and golden brown. Serve with mixed salad greens.
