Delicious Roasted Cauliflower With Creamy Mashed Potatoes Recipe

Ingredients

– 1 head of cauliflower, cut into florets
– 400 g potatoes, peeled and chopped
– 30 ml olive oil
– 1 teaspoon garlic powder
– 1 teaspoon paprika
– Salt, to taste
– Pepper, to taste
– 60 ml milk
– 30 g butter
– Fresh parsley, for garnish (optional)

Method

1. Preheat the oven to 200°C. Line a baking tray with parchment paper.
2. Toss cauliflower with olive oil, garlic powder, paprika, salt, and pepper in a bowl. Spread it evenly on the tray and roast for 25-30 minutes until golden.
3. Meanwhile, boil potatoes in salted water until tender. This usually takes about 15-20 minutes. Drain them well.
4. Mash the potatoes with milk and butter until smooth. Season with salt and pepper to your taste.
5. Serve the roasted cauliflower on a plate with mashed potatoes. Top with fresh parsley if desired.
