Delicious Roasted Carrot Couscous Bowls Recipe For Healthy Eating

Ingredients

– 500 g carrots, chopped
– 2 tablespoons olive oil
– 1 teaspoon salt
– 1/2 teaspoon black pepper
– 1 cup couscous
– 1 1/4 cups water
– 1/2 cup chickpeas, drained and rinsed
– 1/4 cup fresh parsley, chopped
– 1/4 cup feta cheese, crumbled
– 1 tablespoon lemon juice

Method

1. Preheat the oven to 200°C. Line a baking tray with baking paper.
2. Toss chopped carrots with olive oil, salt, and black pepper on the tray. Roast for 25-30 minutes until tender.
3. Meanwhile, heat water in a saucepan until it boils. Add couscous, cover, and remove the pot from heat. Let it sit for 5 minutes.
4. Fluff the couscous with a fork and mix in chickpeas, parsley, feta cheese, and lemon juice.
5. Serve the roasted carrots over the couscous mixture in bowls.
