Delicious Roasted Beets Recipe: Healthy, Colorful, And Easy!

Ingredients

– 4 medium-sized beets
– 2 tbsp olive oil
– 1 tsp salt
– 1 tsp black pepper
– 2 tbsp balsamic vinegar
– 1 tsp honey
– Optional: fresh herbs for garnish
– Optional: feta cheese for topping
– Optional: nuts for crunch
– Water for boiling

Method

1. Preheat the oven to 200°C (400°F).
2. Wash the beets thoroughly and remove the greens. Try not to peel them at this stage.
3. Place the beets on a baking tray and drizzle with olive oil, salt, and pepper. Make sure they are well coated.
4. Roast in the oven for about 45-60 minutes or until they are tender. You can check with a fork.
5. Once cooked, let them cool slightly. Peel off the skins, slice, and toss with balsamic vinegar and honey. Serve with herbs, feta, or nuts if you like.
