Delicious Roast Root Vegetable Salad With Goat Cheese Recipe

Ingredients

– 2 medium carrots, sliced
– 2 parsnips, sliced
– 1 sweet potato, cubed
– 1 red onion, cut into wedges
– 2 tablespoons olive oil
– Salt, to taste
– Pepper, to taste
– 100 g goat cheese, crumbled
– Fresh parsley, for garnish
– 1 tablespoon balsamic vinegar

Method

1. Preheat your oven to 200°C (400°F).
2. Place sliced carrots, parsnips, sweet potato, and onion on a baking tray.
3. Drizzle olive oil over the vegetables. Season with salt and pepper. Toss to combine.
4. Roast the vegetables for 25-30 minutes or until they are tender and golden.
5. Remove from oven, sprinkle with goat cheese, and drizzle with balsamic vinegar. Garnish with parsley before serving.
