Delicious Roast Root Vegetable Salad With Creamy Goat Cheese

Ingredients

– 500 g sweet potatoes, peeled and diced
– 400 g carrots, peeled and chopped
– 300 g parsnips, peeled and sliced
– 200 g red onion, cut into wedges
– 2 tbsp olive oil
– 100 g goat cheese, crumbled
– 40 g walnuts, roughly chopped
– 2 cups mixed salad greens
– 1 tbsp balsamic vinegar
– Salt and pepper to taste

Method

1. Preheat the oven to 200°C (390°F). Line a baking tray with baking paper.
2. Toss the sweet potatoes, carrots, parsnips, and red onion in a bowl with olive oil, salt, and pepper. Spread them on the prepared baking tray.
3. Roast the vegetables for about 30 to 40 minutes until they are golden and tender, stirring halfway through.
4. Remove the tray from the oven and let it cool slightly before adding the salad greens, walnuts, and goat cheese.
5. Drizzle the balsamic vinegar over the salad and mix gently before serving.
