Ingredients
– 200 ml water
– 150 g uncooked rice
– 1 tsp salt
– 2 tbsp oil
– 1 avocado
– 1 cup cherry tomatoes
– 4 slices of cheese
– 1 lemon
– Fresh herbs (like basil or parsley)
– Crushed pepper to taste
Method
1. Start by rinsing the uncooked rice under cold water until it runs clear.
2. Combine rice, water, and salt in a pot. Bring to a boil over medium heat.
3. Once boiling, reduce the heat to low. Cover the pot and let it simmer for about 20 minutes.
4. While the rice is cooking, cut the avocado and cheese. Halve the cherry tomatoes and set aside.
5. After cooking, let the rice cool slightly. Serve on a plate and top with avocado, tomatoes, cheese, fresh herbs, a squeeze of lemon, and crushed pepper.
