Ingredients
– 1 cup chopped rhubarb
– 1 cup chopped strawberries
– 1 cup sugar
– 60 ml vegetable oil
– 1 large egg
– 1 teaspoon vanilla extract
– 1.5 cups all-purpose flour
– 2 teaspoons baking powder
– 1/2 teaspoon salt
– 1/2 cup milk
Method
1. Preheat the oven to 180°C and grease a 9-inch round cake pan.
2. Mix the chopped rhubarb, strawberries, and half a cup of sugar together in a bowl. Set aside for 10 minutes.
3. In another bowl, whisk together the oil, egg, and vanilla extract until combined.
4. Combine the flour, baking powder, salt, and remaining sugar in a different bowl. Gradually add the dry ingredients to the wet mixture, alternating with the milk.
5. Fold in the fruits gently then pour the batter into the prepared pan. Bake for 30-35 minutes or until a toothpick comes out clean.
