Delicious Rhubarb Strawberry Cake Recipe For Spring Baking

Ingredients
– 300 g rhubarb, chopped
– 300 g strawberries, hulled and sliced
– 150 g sugar
– 250 g flour
– 1 tsp baking powder
– 1 tsp baking soda
– 1/2 tsp salt
– 125 ml buttermilk
– 1/2 cup vegetable oil
– 2 large eggs

Method
1. Preheat the oven to 180°C. Grease and flour a cake pan.
2. In a bowl, mix together the chopped rhubarb and sliced strawberries with 100 g of sugar. Set aside for a few minutes.
3. In another bowl, combine the flour, baking powder, baking soda, and salt. Stir until well mixed.
4. Beat the buttermilk, vegetable oil, eggs, and remaining sugar in a large mixing bowl until smooth. Gradually add the dry ingredients and mix until just combined.
5. Fold in the fruit mixture. Pour the batter into the prepared pan. Bake for 40-50 minutes. Test with a skewer to see if it comes out clean.
