Ingredients
– 1 cup red lentils
– 1 medium onion, chopped
– 2 carrots, diced
– 2 celery stalks, chopped
– 3 garlic cloves, minced
– 1 teaspoon ground cumin
– 1 teaspoon turmeric
– 1 can (400 ml) diced tomatoes
– 1 litre vegetable broth
– Salt and pepper to taste
Method
1. In a large pot, heat a splash of oil over medium heat.
2. Add the onion, carrots, and celery. Cook until the vegetables soften, about 5 minutes.
3. Stir in the garlic, cumin, and turmeric. Cook for another minute until fragrant.
4. Add the lentils, diced tomatoes, and vegetable broth. Bring the mixture to a boil.
5. Reduce heat and let it simmer for about 20 minutes. Season with salt and pepper before serving.
