Ingredients

Method
1. Heat the oil in a large pot over medium heat.
2. Add the chopped onion and cook until it becomes soft, about 5 minutes.
3. Stir in garlic, ginger, and curry powder; cook for another minute.
4. Mix in the red lentils, vegetable broth, and tomatoes, bringing everything to a boil.
5. Reduce the heat and let it simmer for 20 minutes, then stir in the spinach and add salt to taste.
