Ingredients
- 1 cup red lentils
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon ground cumin
- 400 ml coconut milk
- 4 cups vegetable broth
- 1 tablespoon lime juice
- Salt, to taste
Method
- Rinse the red lentils under cold water and set aside.
- Heat olive oil in a large pot over medium heat. Add onion and sauté until soft.
- Stir in garlic, ginger, and cumin. Cook for 1-2 minutes until fragrant.
- Add coconut milk, vegetable broth, and lentils to the pot. Bring to a boil.
- Reduce heat and simmer for about 20 minutes. Add lime juice and salt before serving.
